Healthy Anzac Biscuits

INGREDIENTS
- 225g rolled oats
- 225g coconut
- 225g flour
- 55g coconut sugar
- 55g extra virgin olive oil or melted butter
- 55g maple syrup
- 2 – 3 tablespoons hot water
- quarter teaspoon bicarbonate soda
INSTRUCTIONS
- Oven temp 160 (fan0ven) Gas – 4
- Combine oats, coconut, flour, coconut sugar and bicarbonate into a mixing bowl.
- Add oil or butter, maple syrup and hot water and mix well.
- Use a spoon to measure an amount for each biscuit and place on a lined baking tray.
- Flatten each biscuit with your fingers.
- Bake for 20 to 25 minutes until golden.
